Del Maguey Single Village Mezcal - Tobala

"Only the gods plant Tobala". This agave grows wild in the shade of trees, a bit like the truffle. The variety requires almost 18 years to mature, and grows on almost inhospitable soils like granite. The heart will rarely exceed 10kg, making mezcal from this plant even rarer.
This mezcal is produced by Maestro Palenquero, Rogelio Martinez Cruz, in the village of Santa Maria Albarradas. This village is located at high altitude in the Sierra Norte north of Oaxaca City (Mexico). The plants are collected in the wild then brought back to the Palenque (small distillery) where they will be cooked underground, then crushed using a horse-powered mill to be fermented naturally, then distilled in a copper still. of 320 Liters. It takes about 2 months from harvest to getting the finished mezcal.
This mezcal offers round aromas of mango and fruit. Pleasant notes of cinnamon underlined by a slightly funky side propel a long and smooth finish.

Del Maguey Single Village Mezcal was created in 1998 by renowned artist Ron Cooper. Working today with 14 families in 14 different villages in Oaxaca and Puebla (Mexico), it is one of the most beautiful ranges of artisanal and ancestral mezcals.
In its range of "Vino de mezcal", Del Maguey presents rare mezcals, made from different varieties of agave, sometimes collected in the wild, produced in an ancestral way in small stills.
