The Cassagnas estate is an agro-wine entity of 10 hectares at the foot of the Cévennes, which today represents only the beginnings of a project that Ekaterina is building little by little, supported by her husband. Passionate about the production of natural wine, the young winemaker leads the project along two axes: environmental sustainability and creativity. Ekaterina planted 14 grape varieties and 240 trees on a plot of 7 hectares in one piece according to the concept of vitiforestry: rows of vines and rows of olive trees and oaks alternate, thus creating ecological corridors covered with honey-producing flowers . Beehives and nest boxes complete the set. The grapes from plots of vines already in production (Grenache, Aubun and Marselan) recovered in 2020 in the commune, harvested by hand, are vinified with minimalist intervention to express the terroir: native yeasts, without fining or filtration. Winemaking takes place on the ground floor of their residence which is a former train station while awaiting the construction of a bioclimatic building on the plot.
