🍇 Black Grenache 70% and Black Carignan 30%
10-day whole-cluster maceration and fermentation with native yeasts.
Aging for 30 months: 24 months in barrels + 6 months in bottle.
Nose of black fruits and some smoky notes. In the mouth the tannins are well blended and there is a slight acidity, which gives good drinkability. Finish of blackberry and spices. A real gem.

🍸 Bac de las coves should be drunk at room temperature with grilled red meat, poultry, bottarga pasta, roasted vegetables or even a cheese platter.

Cécilia and Guillermo are both Argentinian and arrived in Europe in the 2000s. First in London, then in Paris where Guillermo works in large palaces, notably as a maître d'hôtel at the Royal-Monceau or as a director alongside Jonathan Bauer in Spring by Daniel Rose. Through frequenting great sommeliers, such as Manuel Peyrondet (best worker and sommelier of France 2010) or Jonathan Bauer-Monneret (MSF 2014), the couple ended up wanting to one day plant their own vines. They then settled in Roussillon, in Vingrau, in 2016 where they purchased 5 hectares in organic conversion. 2018 was their first vintage and is a true reflection of their demanding approach from the vineyard to the cellar: manual labor only, whole cluster vinification and fermentations with native yeasts. Bottling is done by gravity, without filtration or fining.
